Hot Weather Cooking - Simple Kids Lunch

With the kids at home during the summer, it doesn't take long to feel like your constantly cooking. When the weather is hot, you need to get in and out of the kitchen quickly!

One of the easiest kid friendly lunches, I call the Deli Plate. Basically it's a combination of cold proteins, fruit, vegetables, dairy and grains.

I like that I can customize this to each kid, as they all have particular things they like. For my older kids, I will also make a fruit smoothie with yoghurt.

Here are some ideas of what I serve on a deli plate:

1) Grains

-crackers, toast, tortillas, bagels, biscuits

2) Vegetables/Fruit

- cucumbers, peppers, sugar snap peas, baby carrots, and cherry tomatoes

- strawberries, sliced apples, oranges and pears, peaches, cherries, half a banana, melon or pineapple chunks, frozen blueberries and raspberries

3) Dairy

- cheese string or slices, yoghurt cups, frozen yoghurt tubes, and cream cheese.

4) Proteins

- lunch meat, grilled chicken, hard boiled eggs, sausage, or pepperoni

I love this lunch as well, because it's easy to pack up and take to the park.
