Every parent needs a couple recipes in their back pocket that will save them from the dreaded drive thru.
Thing is, life gets busy - sometimes you don't think about dinner until 4 PM. That's when I make Chicken Hurry.
I always have these ingredients in my cupboard and you can get this baby in the oven in 5 minutes.
You need chicken, about 2-3 lbs. You can use breast, drumsticks, thighs- whatever.
Also ketchup, brown sugar, water and onion soup mix.
Mix your ingredients, pour over the chicken, cover with foil and bake at 350 F for 1 hour.
1/4 cup water
1/2 cup of ketchup
1 packet of onion soup mix
1/4 cup packed brown sugar
The sweet and sour flavor of the sauce is perfect with rice. I served this with the quinoa & wild rice mix from Costco.
I literally had 10 minutes to get dinner ready before heading out the door to pick up a kid.
Chicken went into the oven, rice in the rice cooker (best invention ever!) and out the door I went.
You can remove the foil in the last 15 minutes of cooking to thicken the sauce, throw together a salad and dinner is done!
