Today for lunch, I needed something warm and not another salad!
This is a quick lunch that is faster than hitting the drive thru!
These chicken burgers are from the Janet & Greta's line of foods at Costco. They're the authors of several healthy living cookbooks and every recipe of theirs has loads of flavour.
I started with the Bread in a Mug on pg. 265 of Trim Healthy Mama. I added Mrs.Dash for flavour and I ground up my almond flour to get a smoother consistency.
I cooked it in the microwave for 1 minute.
Once this was cooling, I heated my chicken patty for two minutes in the microwave.
I then assembled my sandwich with slices of mozzarella cheese, green leaf lettuce, and Hellman's mayo.
These chicken burgers have swiss cheese and onions in them, so they were flavourful and not at all dry!
I followed up with dessert of fresh raspberries, and a splash of cream mixed with Truvia.
Perfect lunch on a cloudy day!
